Happy Saturday!! :)

Hubs is bringing home the bacon, so the kids and I are trying to keep ourselves occupied. I've been hiding a tube of Pillsbury biscuits in the fridge for breakfast this morning, after finding this recipe earlier in the week. It sure was a hit!! There was not a crumb left!! I had mine with chocolate silk coffee, and it was phenomenal!! I used just one tube of Grands, and it was perfect for the four of us. (I also was lazy and didn't measure anything - bad habit of mine - and it turned out great!!) Here's my sticky bun ring:



It's not as pretty as the pictures from the original post, but it's not about how it looks... it's all about how it tastes!!!

While on the subject of food, we were starving for something good and hot last night for dinner. The hubs wanted a quiche, but we were out of milk (and too tired to go to the store for just that!). I happened to have a couple of cans of cream of mushroom soup on hand, so I got to thinking - and this is what I came up with!

Egg, Bacon and Potato Bake

4-5 med potatoes, thinly sliced (I didn't peel mine, but that's my preference)
1 lb bacon, cooked and crumbled (we used the real deal, but turkey bacon would be just as good!)
2 - 10 3/4 oz cans of cream of mushroom soup
12 eggs
1 cp shredded cheese of your choosing
onions, optional
salt and pepper to taste

Preheat oven to 375 F. Slice potatoes and evenly layer in bottom of a 13x9 pan. Evenly sprinkle crumbled bacon over potatoes. In a large bowl, whisk eggs and soup together until mixed. Pour over bacon/potatoes.
Bake in oven 45 minutes to an hour until potatoes are tender and knife inserted in the middle comes out clean. Sprinkle cheese on top roughly 5 to 10 minutes before bake is done, so it's nice and melty!!

Well, now that breakfast is over, dishes done, floors swept, laundry started, general picking up done, I am off to have a hot date with three short folks and hopefully my sewing machine!
